Maqful is a traditional dish of Marrakech. It is a lamb tajine decorated with tomato and onion slices and spiced with saffron, cinnamon, paprika, ginger and honey. When cooked, it is set to caramelize according to a traditional method of cooking called Binnarain, literally meaning \"Between two fires\". This method consists of covering the tagine with a plate topped with embers and letting the tomatoes and onions sprinkled with sugar caramelize.
